Grilled Peach and Blue Cheese Salad


We hosted a bit of a last-minute lunch on Sunday. Lunch for five people, two courses, 90 minutes to prepare. Feeling a bit like I was on a reality TV cooking show, we quickly scrambled to put together a menu (a delicious chicken pie recipe coming your way soon). I toyed with the idea of green beans to go with the pie, but decided on a salad instead- having remembered seeing these beautiful baby gem lettuces at my supermarket recently.

Wanting to dress them up a little, we decided on blue cheese - in the absence of figs, we caramelised peach slices and served it with a simple balsamic dressing.

If you're not a fan of blue cheese, then you can use a soft goat's cheese instead - but do give it a try. It converted almost all the blue cheese haters at the table.


With three ingredients, I'm not going to give you a recipe - simply slice the lettuce halfways, through the stem so the leaves remain intact, then rinse. Crumble over the blue cheese. Slice the peaches, fry in butter until golden (or grill, if you prefer), assemble and serve. Easy peasy.
