Special Breakfast Salad | Atkins

With Father's Day this Sunday, I thought I'd share a special brunch-in-bed-for-dad recipe for you - naturally one that is healthy for the whole family. As we're happily into avocado season, these healthy-fat-bombs make a great addition to any breakfast. With spicy chorizo, crunchy croutons, a healthy poached egg and decadent Hollandaise sauce - this is a breakfast that surely ticks all the boxes


Serves 2
Ingredients:
2 avocados
1 piece of chorizo
drizzle of olive oil

2 slices of bread  (Atkins has a pre-mix that makes it easier for you)
2 eggs

for the Hollandaise:

2 egg yolks
1 tsp lemon juice
1/2 tsp mustard
5 tbsp butter

Method:

Heat a frying pan on a high heat and add the drizzle of olive oil. Slice your chorizo into thick coins and fry until crispy. Remove from the pan and set aside. Peel your avocados, remove the stone and cut the flesh into small, bite sized pieces (about 2cm square). Heat the grill of your oven, cut your bread into 2cm squares and place on a baking tray. Grill until crispy.

To make the Hollandaise sauce, melt your butter in a microwave proof container, or in a saucepan. Add the egg yolks, lemon juice and mustard to a blender and blend on high for 15 seconds. Turn down the speed and slowly drizzle in your butter, drop by drop until the sauce thickens and all the butter is incorporated. Add salt if needed.


Smear divide the Hollandaise sauce in half and smear each half on the bottom of two plates. Top with the chorizo, avocado and croutons. Poach your eggs until done to your liking (I use this method) and place on top of the salad. Enjoy immediately.

Note :If your Hollandaise sauce splits- no need to panic. Mix an egg with a splash of water in a bowl over a saucepan of simmering water. Slowly add the split mixture to the egg / water mixture, whisking constantly.Your sauce should be saved.
