Following on from my bread-baking victory last week, I needed to find a suitable end for the finished product. Again, with a little help from NoMU, I decided to make the ultimate cheese sandwich. But, this is so, so much more.
Inspired by this, I changed mine according to what I had in the fridge - so instead of a well-balanced mozzarella and pastrami sandwich, it became a beast - three cheeses, bacon and a salsa. A delicious mutant.
Even though this is a 'recipe' - it's also a sandwich. Sandwiches are meant to be stress-free. If you only have cheddar in your fridge and sliced chicken and not bacon - own it. Make it yours. No need to go flustering trying to find goat's cheese (although, as always, it will be a delicious addition). I'm not giving you quantities - you can load this up with as much - or as little - cheese as you want. This serves 1. Don't judge.
Ingredients:
4 slices farm bread or home made bread
a handful of gouda (I find it melts better than cheddar - but feel free to use your preferred type of cheese)
buffalo mozzarella
soft goat's cheese (I adore Fairview's Chevin)
bacon - fried, in small pieces
butter
salt and pepper to taste
for the salsa:
5 baby tomatoes
small handful basil, finely chopped
splash of balsamic vinegar
splash of olive oil
1 tsp sugar
salt and pepper to taste
Method:
Heat a frying pan on a medium-high heat. Place the cheeses and bacon on your bread, to make two separate sandwiches. Butter the outside of the bread, then place in the frying pan. Press down slightly with a spatula. While this side is cooking, combine all the ingredients for the salsa and allow to stand in a bowl at room temperature. Check the sandwiches - the cheese should have started to melt and the bread turn a golden brown. Once browned to your liking, turn the sandwich over and allow the other side to brown.
Remove from the pan once the bread is evenly browned and the cheese has melted. Slice the sandwiches in half, spoon over the salsa and eat immediately.
